The title doesn't even do this dish justice ... but either way, this chili is so good and for the most part pretty healthy. Last night Rob (my fiancé) and I were in the mood for something warm and hearty and this chili totally hit the spot!

Ingredients:
- 1.5 lbs of Extra Lean Ground Turkey
- 1 Yellow Onion (chopped)
- Olive Oil
- 3 Garlic Cloves (minced)
- 2 (15oz) cans of Dark Red Kidney Beans (rinsed & drained)
- 1 (15oz) can of Sweet Corn (rinsed & drained)
- 1 (28oz) can Diced Tomatoes
- 1 Red Bell Pepper (chopped)
- 1 cup of Chicken Broth
- 3 tbsp Chili Powder
- 1 tbsp Chipotle Powder
- 1/4 tsp Cayenne Pepper
- 2 tsp Ground Cumin
- Salt & Pepper to taste (I use 1 tsp of Salt and 1/2 tsp of Pepper)
- Guacamole (topping)
Directions:
- Heat skillet/pan on Medium High Heat and add Olive Oil and chopped Yellow Onion, stir until Onion's are soft (around 5-6 minutes) and then add the Extra Lean Ground Turkey and break apart until fully cooked.
- Once Ground Turkey is cooked transfer to crockpot (slow cooker). Add the rest of the ingredients into your crockpot and cook for 7 hours on low or 3 hours on high.
- After your chili is cooked, serve & top with Guacamole!
