Ultimate Healthy Chili

The title doesn't even do this dish justice ... but either way, this chili is so good and for the most part pretty healthy.  Last night Rob (my fiancé) and I were in the mood for something warm and hearty and this chili totally hit the spot!

Hope you guys enjoy!

Ingredients:

  • 1.5 lbs of Extra Lean Ground Turkey
  • 1 Yellow Onion (chopped)
  • Olive Oil
  • 3 Garlic Cloves (minced)
  • 2 (15oz) cans of Dark Red Kidney Beans (rinsed & drained)
  • 1 (15oz) can of Sweet Corn (rinsed & drained)
  • 1 (28oz) can Diced Tomatoes
  • 1 Red Bell Pepper (chopped)
  • 1 cup of Chicken Broth
  • 3 tbsp Chili Powder
  • 1 tbsp Chipotle Powder
  • 1/4 tsp Cayenne Pepper
  • 2 tsp Ground Cumin
  • Salt & Pepper to taste (I use 1 tsp of Salt and 1/2 tsp of Pepper)
  • Guacamole (topping)

Directions:
  • Heat skillet/pan on Medium High Heat and add Olive Oil and chopped Yellow Onion, stir until Onion's are soft (around 5-6 minutes) and then add the Extra Lean Ground Turkey and break apart until fully cooked.
  • Once Ground Turkey is cooked transfer to crockpot (slow cooker). Add the rest of the ingredients into your crockpot and cook for 7 hours on low or 3 hours on high.
  • After your chili is cooked, serve & top with Guacamole!
